Ooh, dark all the way! I rarely even waste my time on milk chocolate! But I have to say that bittersweet is a bit too much sometimes.

Nearly total agreement with the above. Milk is OK if there's nothing else, but nothing beats the good dark stuff.

They conch the chocolate for 72 hours straight! Conching breaks down the chocolate and hazelnut particles; the smaller the particles, the smoother it is. By the time they pour it off into molds those particles can only be seen under the microscope. It melts if you look at it and if you put it in your mouth it flows down your throat like milk. No chewing necessary

As a side-question: What's everyone's favourite brands?
Myself, in no particular order:
Hershey's, Cacao Barry, Felchlin, El Rey, Vintage Hawai'ian, Valrhona, Guittard.

Yes, I said Hershey's They just bought Scharffen Berger and they're letting them do chocolate the way they've always done, plus Scharffen Berger's additions to the process can only improve Hershey's product.

dark, the more bitter the better

100 % dark Chocolate for me sooooo tastey and its healthier for you as well...

I think so far my favorites are Godiva and Ghirardelli. Though I do enjoy a good old dark Hershey bar too.

They're all good in their own special way.

No favorite brands really, I really dont pay too much attention. Though Hersey is one I know and love

lol, that's true, all the major brands have their perks.
Though most of the cheap holiday candy is just a travesty.

I did remember one though! Even though they're mild chocolate, I absolutely die over the hard shell Cadbury eggs! (not the cream filled ones, they're good too, 1 is enough to last me all year)
I always have to stock up on those little shell ones every Easter!

Dear Sweet Goddess o' the Green Fields, that whole line of flavoured chocolate fruits is second only to saffron in terms of my food weaknesses. If they ever come out with saffron chocolate, I'm in DEEP trouble...
