Last night I made some pasta that turned out quite tasty IMHO.
I chunked up sweet red and green peppers, and onions and caramelized them with some olive oil and red vine vinegar. Then added capers, mushrooms, coarse diced fresh garlic and crushed grape leaves, and cubed grilled chicken breast and let that marinate in the red wine vinegar for a few hours. When it was time for supper, I added chunks of tomato(so they weren't soggy) and blue cheese crumbles and put it on some penne pasta. I know traditionally red wine does not go with chicken, but it really lent itself to this recipe I believe.
At least the mate thought it was good!

I tried it with rotelle and merlot. A little intense, but it'd probably be great cold in a pasta salad.
I'm going to try penne with white zin next.
You can toggle with the wine amount if you want to back off on the intensity.

*cant help but make fun of Quiznos* I just find em to be overpriced subs, with not much better flavor than Subway. I found that the subs were supposedly only better because they had more meat, but the few times Ive been to one, they put so much meat and sauce(especially sauce) in mine that the whole sub fell apart and I found myself asking for a spoon to eat mine. granted, that might be fun, but im a sandwich kinda guy. always liked subs, always will. And no, I wont go off on praising subway. They do get kinda stingy on certain things, but oh well, its low on fat, and while im not excessively overweight, i was over 200 lbs until recently *grumbles and shakes his fist in the direction of the local McDonalds*

That's fine. You can make fun of Quizno's all you want, it's not gonna stop me from liking it. Haven't tried Subway yet, though.
Have you checked out the "Eat This, Not That!" site yet? It's based in a men's health site, but it has good tips, dietary analysis and heads-ups for everyone. You'd be surprised how much fat and sodium is in a turkey parmesan sub!

Subway...yuck! I mean the food is actually pretty good...but they put NOTHING on your sandwich. You're paying for bread, a whole lot of lettuce and like three pieces of meat.
