Its something I've been messing with since starting university but it's cheap, and really goooooooooooood
Ingredients:
Turkey breast (about half of a kilogram for 4 people)
Vegetable stock
Sunflower oil
Tomato puree
Mushroom Ketchup
Cornflour
Pasta+ anything else you'd like in it.
First off, start by slicing the turkey into bite sized bits, not too big otherwise it'll take longer to cook. Then get a big pan, something you can get a lid on and put a little oil in it. Preheat it and toss in the turkey on a medium heat, till the turkey's turned white be sure to turn it over on occasion to not burn it, then turn down to a low heat.
While the turkey's frying, take a mug with boiling water and put 2 teaspoons of vegetable stock, 1-3 drops of mushroom ketchup and a good squib of the tomato puree. Mix it well before adding it to the turkey in the pan and leaving it to simmer for about 20 minutes.
At this point usually i do some pasta or some mashed potatos. Though you can have anything you want with it
After 20 mins, take the pan off the heat and remove the meat. Put the juices / stock back onto the boil and add a 1/8th of a mug of cold water with a humped teaspoon or 2 level ones of cornflour mixed in (depends on the amount of stock left.) Turn the heat up to a medium one and simmer the mixture for a while till it thickens to the desired level. Then serve the meat with the pasta + veg, and the stock becomes a really nice gravy
