"wolf chow"

I make these quite often (maybe too often for my own good), and everyone that I've made them for have raved about them, and now I'm going to share the recipe with you all:

I call them "wolf chow" or sometimes "Manly Muffins", and they're essentially sloppy joes baked into fluffy biscuits topped with melted cheddar. They're easy to prepare, easy to hold, easy to eat, and don't make too much of a mess.

Here's what you need:

Cooking Supplies:

-> Oven
-> Muffin Tin (Size doesn't matter, a full normal-sized batch requires a tin of 8 muffin slots)


Ingredients:

-> 1 lb Ground Beef (I prefer Ground Round or Chuck, but if you want lean or even Ground Turkey, go for it!)

-> Ketchup
-> Barbeque Sauce (Use whatever kind you like best, I've found that a thicker, sweet BBQ sauce works wonders and adds to the taste, as a thinner sauce will make the biscuits soggy. I use Sweet Baby Ray's Hickory & Brown Sugar BBQ Sauce)

-> 1 Can of Grands or similar Biscuits

-> Shredded Cheddar Cheese (Or your preference)

Directions:
1] Preheat oven to 350 degrees, as per directions for the biscuits.

2] Brown the ground beef in a skillet or frying pan (however you get that done!) and drain the grease for disposal. (Greasy meat will prevent the sauces from sticking, and will also soak into the biscuits)

3] While meat is browning, pat the biscuits until they're flat...
and press them down into the greased muffin tin, forming "cups"...

4] Add as much of both the Ketchup and BBQ sauce to the ground beef and mix it in until the meat is coated...

5] scoop about 2 tablespoons of the sauced meat into each biscuit cup, so that it overflows with meaty goodness. (The biscuits will blow up, don't worry.)

6] Toss 'em in the oven and bake for about 2-3 minutes less than the biscuit directions call for. (About 10 minutes, give or take..)

7] At this point, the biscuits should be nice and pillowy, but not golden brown, take them out of the oven, and place a good amount of shredded cheddar on top of each of the biscuits and throw them back into the oven for another 2 minutes so that the cheese can melt.

8]Let them cool about 5 minutes, and then dig them out of the tin with a fork.

9] Enjoy!

that sounds pretty good!

i have a suggestion though - try using muffin cups to line the tin. that way you wont have to "dig them out" - they just slide out. and the paper can be put in the oven, no worries about that. you can find them in the baking isle.. just make sure you look for muffin cups, not cupcake cups, since cupcake cups are about half the size of muffin cups, and i dont know how much the biscuits would puff up

If only I had access to an oven and muffin tins here at college. The next time I go home, I am absolutely making those. They sound SO GOOD. :)

Does Alpha rank count for getting first dibs on the chow? o_o Hee. That really sounds good; I usually would shy away from Sloppy Joes (chili beans and cooked onions are really not my thing) but a mess of ground meat and sweet-spicy barbecue sauce in a pastry muffin? Assuming I can find myself access to a working oven, I think I'd like to give your recipe a try, Fallenwolf. ^_^ Danke danke for sharing it!
